They say apple doesn’t fall far from the tree. My dad was a Mr. Potato head. The man will eat mashed, fried, boiled, grilled, or pretty much whatever a human can possibly do to a potato. I am a potato addict myself. I’m no scientist, but I am almost convinced that this is definitely have something to do with genealogy. You say ? Need more proof ? Now to the 3rd generation…my son. This was what he had been asking for breakfast for the past couple days “potato mama…I want potato”. It all started with me craving for hash brown. And the boy has been demanding this crispy scallion sesame hash brown each morning !! I love adding scallion into the hash brown because it adds some depth of flavor and the sesame seeds contribute to the nuttiness.
I’ve made hash brown several times before in the past, but couldn’t get it to be really crispy. Finally I figured out that I should shred the potato thinner. BINGO! So crispy that 1 pound of potato is not even enough to feed the hungry 2-year old !! Potato…what would I do without you ?
Crispy scallion sesame hash brown (8-10 mini hash brown)
- 1 lb of baking potatoes
- 2 stalks of scallion use the green part,finely chopped
- 2 Tbsp of sesame seeds black or white or mixture of both is up to you
- 3 Tbsp of cooking oil + 1 Tbsp or more for cooking
- Salt to taste
- Plain Greek yogurt to serve with
Peel the skin off the potatoes. Grate the potatoes so they are thin. Place the potatoes inside a cheese cloth or tea towel and squeeze the liquid out of the potatoes as much as you can. The drier the potatoes, the crispier they will get
Once the potatoes are dried, place them in a large mixing bowl. Add in green onions, sesame seeds, and cooking oil. The cooking oil will help to bind everything together. I usually don't season the mixture with salt yet.
Preheat a large skillet with 1 Tbsp of oil. Drop about 1-2 Tbsp of potato mixture on the skillet and let them cook until they are golden brown and crispy on one side. Season with a little bit of salt. Watch not to burn the potato (mine get a bit too brown in the photo). Flip over and let the other side cook to golden brown and crispy too. You can cook several of them at the same time. Repeat with the rest
Serve immediately with dollop of Greek yogurt if you desire
