Potatoes are always around in our pantry. I’m a potato girl (because it’s starchy). Seeing the dressed potatoes recipe on Jamie’s 30 minute meals cookbook, I couldn’t help but to try it. The dressed potatoes recipe used regular potato and sweet potatoes along with lemon, chili, coriander and feta cheese. This combination is SO SO GOOD !!!!! When you bite into it, you have the sweetness from sweet potatoes, freshness from the lemon and coriander, slightly spicy (if you do add chili, you can always opt out) and salty from the cheese.
I’m super impressed with such simple ingredients and fabulous idea! The best part of this is that it is very easy to make. As part of the 30-minute meal recipe, the potatoes are cooked with microwave to save time. Otherwise you can always bake it (baking it will definitely take more than 30-minutes)
DRESSED POTATOES
Ingredients
- 1 medium potato
- 2 sweet potatoes
- ½ a lemon
- 1 fresh red chili
- A bunch of fresh coriander
- 2 oz feta cheese
Instructions
- Wash the potato and sweet potatoes and halve lengthways. Put them into a large microwave-safe bowl with 1/2 a lemon. Cover with cling wrap and put into the microwave on full power for 15 minutes
- Preheat your oven to 400 F. Wash the potato and sweet potatoes. Wrap them individually in aluminum foil and place in the oven and roast for about 45 minutes to 1 hour (this depends on how big your potatoes are). You can check by piercing with fork, if they are tender, they are cooked. Put in the lemon for the last 15 minutes of roasting
- Finely chop the red chili and most of the coriander on a board, mixing as you go. Add the feta cheese and keep chopping and mixing
- Use a tong to squeeze the cooked lemon over the potatoes Add the coriander mixture above and mix everything together with a fork. Taste and add some salt of pepper if needed
