CINNAMON HORCHATA / CINNAMON RICE MILK (4 large glasses)
What you will need:
  • ¾ cup long-grain rice
  • 4 cups whole milk
  • 1 tsp ground cinnamon
  • ¼ cup light brown sugar
  • 1 or 2 cinnamon sticks
Instructions:
  1. Boil the long-grain rice following the instructions in the package, then drain and run under cold water so it cools down quickly. Pop it into ablender with the milk, ground cinnamon, and sugar. Whiz until smooth, then taste and add a bit more sugar, until it's sweet enough for you. You may need to do this in 2 batches if your blender isn't big enough
  2. Once it's lovely and silky, strain it into a jug with a load of ice and discard any rice left behind. Snap your cinnamon sticks in half and pop them in. Sprinkle over a little more ground cinnamon and serve
