What you will need:
  • 18 oz white glutinous rice/sticky rice (wash and drain off water)
  • About 30-40 pieces of 3 x 12-inch banana leaves (and some extra in case there's a tear)
  • 1 lb of dark palm sugar / gula jawa + 2 cups water (or substitute with coconut milk for richer taste)+ 1 pandan leaf / screwpine leaf (knotted)
  • 1 lb of finely grated coconut meat
  1. Put the palm sugar , water, and screwpine leaf in a medium-size sauce pan over low heat and let the sugar slowly melt and set aside
  2. Steam the coconut meat for about 10 minutes and set aside to let it cool down completely
  3. Wrap the lupis as shown in the photos below
  4. Prepare a large pot with water enough to cover the lupis and boil for the next 3 hours with a lid on
  5. Drain off the cooking water and place the lupis in a colander to let extra water drain off and let them cool down completely before unwrapping the leaves. They should be firm and lightly bouncy
  6. Once the lupis has cooled down, roll each one in a grated coconut meat to cover all the lupis and serve with the melted palm sugar on the side or drizzle some on top of the lupis
