What you will need:
  • 10 Chicken eggs
  • 2 Tbsp Dark soy sauce
  • 1 tsp whole white pepper
  • 1 stick of cinnamon
  • 4 star anise
  • 1 tsp of fennel seeds
  • 4 cloves
  • 2 whole nutmegs
  • ½ cup of rock sugar
  1. Boil the eggs as you would normally make hard-boiled eggs. Let them cool and then peel
  2. Bring another pot of water with the rest of the spices to boil. Put in the eggs and turn of heat. Cover with lid and let them soak in the pot for 2 hours
  3. Bring the pot back to boil again and turn off the heat and let stand again for 2 hours
  4. Repeat this process (step 1 to 3) several times throughout the day for 2 days
It seems like lots of work, however, this method really makes great Tea Eggs and it worths the effort :)
