EGGS WITH CAVIARE (4 servings)
What you will need:
  • 6 eggs, hard-boiled and halved, lengthways
  • 4 spring onions, very finely sliced
  • 2 Tbsp mayonnaise
  • ½ tsp Dijon mustard
  • 2 Tbsp caviare or black lumpfish roe
  • Salt and freshly ground black pepper
  • Small sprigs of dill, to garnish
Instructions:
  1. Remove the yolks from the halved eggs. Mash the yolks to a smooth paste in a bowl with the spring onions, mayonnaise and mustard. Mix well and season with salt and pepper
  2. Fill the egg whites with the yolk mixture and arrange them on a serving dish. Spoon a little caviare or roe on top of each before serving
