Golden sand is quite a title for a dish, isn’t it ? I must tell you first though, there is no sand involved in the process, so don’t worry, I haven’t gone crazy! We’re still staying within edible ingredients. The term golden sand is often used in restaurant menu to describe dishes that are prepared using salted duck egg yolks. The salted duck egg itself is a very popular ingredient in Asian cooking.
The egg white of the salted duck eggs are very salty and usually eaten with porridge dishes in our family. The egg yolks though have a very rich taste, and slightly salty. The egg yolks have kind of a “sandy” texture, and hence the name golden sand.
The golden sand chicken is just one of many dishes out there in Asia that uses salted egg yolks. Other popular one is golden-sand shrimp. In this golden sand chicken, the chicken is coated in batter and then fried and then stir-fried with the salted egg yolks. When you bite into the crunchy chicken, you taste the savoriness, the amazing flavor of curry leaves and slightly spicy from the chili. OMG! my husband loves this dish!! - 2 boneless skinless chicken thighs
- 15 curry leaves
- 4-5 red bird's eye chili
- 3 salted duck's egg yolks
- 1 egg beaten
- 1 cup corn starch
- Dash of salt and sugar
- Peanut or grape seed oil for deep-frying
Cut the chicken thighs into bite-size pieces and place in a bowl. Sprinkle with dash of salt and sugar and let it marinade for about 30 minutes. Place the corn starch in a shallow plate and egg wash in another bowl
Preheat oil to 325 F. Dip the chicken in the egg wash and then coat with the corn starch and fry in the oil until golden brown and cooked through (no longer pink and bloody). Remove and place on the absorbent paper towel
In a wok or skillet, preheat about 2 Tbsp of oil and stir-fry curry leaves, chili until really fragrant, about 1 minute or so, add in the salted egg yolk and stir-fry for about 1 minute, it will start to bubble, that's normal. It should start to smell amazing. Stir in the fried chicken and make sure every piece is coated by the salted egg yolk sauce. Dish out onto serving platter and garnish with cilantro and serve immediately
