
Spicy Chicken Noodle or being called Mie Ayam Pedas in Indonesian language is another favorite noodle dish of mine. Yes, I know..I know..I like things hot and spicy. This noodle recipe is actually quite “mild” but you can feel the hint of the spiciness from the fresh chili and chili powder. These two are also elements you can control in terms of spiciness
SPICY CHICKEN NOODLE SOUP / MIE AYAM PEDAS (2-3 servings)
9 oz (250 g) fresh/dried egg noodles
2 cloves garlic (minced)
3 red bird’s eye chili (chopped, seeded if you want)
5 oz (150 g) cooked chicken meat (ground it up)
3.5 oz (100 g) chinese bokchoy (chopped and blanched)
1 Tbsp of chili powder
1 tsp of white pepper
1 tsp of sesame oil
1 tsp of salt
2 Tbsp of canola oil
FOR THE SOUP:
2 cloves garlic (minced)
2 Tbsp soy sauce
1 tsp of fish sauce
3 C (750 ml) chicken broth
COOKING METHOD:
1. In a big pot, boil chicken broth with the rest of the ingredients until it is boiling. Taste and adjust to your liking by adding more soy sauce, fish sauce or perhaps sugar if needed
2. Heat your pot with some oil and saute the garlic and fresh chopped chili until fragrant. Add in the ground cooked chicken meat and add in the rest of the seasoning and saute for another 1-2 minutes. Turn off the heat and set aside
3. Portion the cooked noodles and chicken meat onto individual serving bowl. Laddle the hot soup over and ready to serve
