4fresh Mandarin orange or 6 oz of canned Mandarin orangepeeled and segmented, drained
½cupof pomegranate seeds
8ozfresh mozarella cheesecut into cubes
Drizzle of extra-virgin olive oil
Juice of 1 lemon
Fresh mint leaves
Instructions
While the pizza is baking, place the arugula salad in a large salad serving bowl. Add in fresh Mandarin orange segments, pomegranate seeds, mozarella cheese cubes followed by drizzle of olive oil, lemon juice, and fresh mint leaves. Give them a toss. I reserve a bit of the pomegranate seeds and fresh mint leaves for garnishing on top and overall presentation. Ready to serve
