2stalks of scallionuse the green part,finely chopped
2Tbspof sesame seedsblack or white or mixture of both is up to you
3Tbspof cooking oil + 1 Tbsp or more for cooking
Salt to taste
Plain Greek yogurt to serve with
Instructions
Peel the skin off the potatoes. Grate the potatoes so they are thin. Place the potatoes inside a cheese cloth or tea towel and squeeze the liquid out of the potatoes as much as you can. The drier the potatoes, the crispier they will get
Once the potatoes are dried, place them in a large mixing bowl. Add in green onions, sesame seeds, and cooking oil. The cooking oil will help to bind everything together. I usually don't season the mixture with salt yet.
Preheat a large skillet with 1 Tbsp of oil. Drop about 1-2 Tbsp of potato mixture on the skillet and let them cook until they are golden brown and crispy on one side. Season with a little bit of salt. Watch not to burn the potato (mine get a bit too brown in the photo). Flip over and let the other side cook to golden brown and crispy too. You can cook several of them at the same time. Repeat with the rest
Serve immediately with dollop of Greek yogurt if you desire
Notes
You can also make one large pancake by using large skillet (about 10-12 inches)
