Preheat oven to 425 F. Give the artichokse some rinse of water. Pat dry. Trim off about 1-inch of the top of the artichoke and the bottom
Grab 4 pieces of heavy-duty aluminum foil, large enough to wrap the artichoke. Place the artichoke on the foil. Tuck in about 2 garlics on each artichoke. Drizzle some oil over the top. Give a squeeze of lemon juice over it. Pinch of salt. Wrap the foil around the artichoke nicely. Repeat with the rest of artichokes
Place inside the oven and roast for the next 1 hour or maybe a bit longer. The artichoke should be soft by the end of cooking time. Carefully unwrap the foil and when they are cool enough to handle, remove the outer shells until you get to the middle where you will see the heart. Remove the outer layer of the heart and then scoop out the delicious heart and mash it with the roasted garlic. Spread it on top of toast, crackers, or eat them like that
