½cupwhite sugar + 1/4 cup of packed brown sugaryou can about 1 cup of white sugar if you want it much sweeter
1tspof vanilla extract
1 ½cupsof zucchinipeeled and roughly chopped
1 ½cupsof whole wheat flour
½tspsalt
½tspof baking powder
¼tspof baking soda
1Tbspof cinnamon powder
¼tspof nutmeg powder
1pintof fresh blueberrieswashed and gently pat dry
1tspof white sugarfor sprinkling
Instructions
Preheat oven at 350 F
In a large mixing bowl, crack in 2 eggs and lightly beaten. Add in the oil, brown sugar, vanilla extract and stir to mix everything. Add in the zucchini, flour, and the rest of the ingredients up to nutmeg powder. Stir to mix everything. Gently fold in the blueberries. The batter will be quite thick and that's the way it is
Get a loaf pan and grease all side or you can line with parchment paper and grease the parchment paper (easier to lift the bread up later). Pour the batter into the pan and spread evenly. Sprinkle some sugar on top (this will make delicious crust). Bake in the oven for about 1 hour 15 minutes or until a toothpick inserted into the middle comes out clean
Let it cool in the pan for about 15 minutes and then lift the bread out and let it cool completely before slicing
