1lbgreen beans(trim off the ends and cut into 2-inch length)
2Tbspfried shallots crisp
½cupchopped roasted peanuts
1Tbspof grape seeds oil or any oil you prefer
Juice of 1 lime
2tspof fish sauce or more to taste
Instructions
Bring about 1 quart of water to a boil. Add in the beans and cook for about 5 minutes. The green beans should be still green and slightly crunchy. Drain off the water and run through cold water. Set aside
When ready to serve, add in the peanuts, oil, lime juice and the fish sauce. Toss lightly and have a taste and add more fish sauce if needed. Lastly, sprinkle on the fried shallots crisp
