1lbof pork loin(cut into bite-size pieces) feel free to substitute with beef or chicken if you like)
4clovesgarlic(peeled and finely minced)
5shallots(peeled and chopped)
2Tbspof minced ginger
5-6mixture of green and red chilis(seeded if you like and finely chopped)
2bundles of bean thread noodles(soak in warm water until soft, discard water)
Salt to taste
2Tbspof oil
Cilantro leaves for garnish
Instructions
Cut the noodles into 5-6 inches in length. Set aside. Preheat a wok or skillet. Add in the oil and then the garlic, onion, chili and ginger and stir fry until fragrant. Add in the pork and stir-fry until they change color. Add in water until they are just nicely cover the pork and bring it to a boil. Cover with lid, lower the heat and let it simmer until the pork is cooked through
Uncover and add in the bean thread noodles and give it a stir to mix everything. Have a taste and season with salt to taste. Let it cook for another 5 minutes. Turn off the heat. The dish should be a bit "wet" but not soupy. Garnish with cilantro
