My mom saw this recipe at one of the cable shows and she modified a little bit. I know she’s trying hard to keep the confinement recipes “interesting”. Overall, I’m okay with it. I do get a little tired of ginger. Every single food and drink has ginger in it, but I eat them anyway. It’s only for a month, I can live with that! I already carried another human being for 9 months ;b
The few main ingredients in confinement recipes that will be included in almost every cooking are sesame oil, ginger, black vinegar and wine. The sesame oil, ginger and wine are included to supply “heat” and restore the “Qi”.
CHICKEN STIR-FRY WITH DOM BENEDICTINE LIQUEUR
- 1 lb boneless free-range / all-natural chicken breast/thighs
- 8-10 fresh mushroom sliced
- 1 green/red bellpepper sliced
- 1/2 onion finely chopped
- 2-3 bird's eye chili seeded and sliced thinly
- 1 Tbsp of ginger finely chopped
- 4 Tbsp DOM Benedictine Liqueur
- 2 Tbsp of Sesame oil
Heat wok with sesame oil. Saute the ginger until crispy and fragrant. Add in the bellpepper, onion, mushroom and bird's eye chili. Continue to saute until they are soft
Add in the chicken meat and saute until they turn color and cooked through
Add in the DOM Benedictine Liqueur and let it simmer for about 15 minutes to let the alcohol cook off
The alcohol is "cooked-off" during the cooking process, hence it is safe to use alcohol in cooking while breastfeeding.
