Fiorina requested pancakes for breakfast. She usually never really requested specific food for breakfast. We have a pretty standard breakfast every morning. Usually one fried egg, refrigerated raw oatmeal with chia seeds, and sometimes she wants some unsweetened whole grain cheerios. Every now and then I may make some pancakes, or substitute the oatmeal with whole wheat toast with almond butter and honey. I’m happy to say that both kids are pretty good breakfast eater and they are pretty accustomed to eating wholesome food too. I decided to make whole wheat pancakes for her that morning. I usually just make a regular round shape pancakes, but it was a quiet morning and I started with a love shape and then one thing led to another and I ended up with some more funky shapes ha..ha..! Fiorina couldn’t be more delighted to see a sun, clouds, a girl (which she told me it’s her), and a teddy bear (I know it doesn’t look like one), but she immediately pointed out…. “that’s my bear bear”. I made her day and she made my day.
FLUFFY WHOLE WHEAT PANCAKES (10-12 mini pancakes)
Mix the flour, sugar, baking powder, and salt in a large mixing bowl and set aside
Pour 1 cup of milk in another mixing bowl, add in beaten egg and oil and stir to mix. Pour this into the flour mixture and stir to mix until you get a rather thick batter, but don't over stir it. A few lumps here and there is totally okay
Preheat a non-stick skillet on medium heat. Pour in about 1/4 cup of the batter and let it cook until it starts to bubble and golden brown on one side, about 1-2 minutes, then flip to the other side for another 1 minute or so and then transfer to a plate and cover with aluminum foil to keep warm while you cook the rest of the pancakes. If you want to do some shape, just drop the batter where you want it to be to or simply shape it how you like it with the help of the spatula . The batter is thick enough to do that
