Time is not on my side lately and I guess you can tell because I haven’t been able to post much recipes. Things have been a little crazy but I know all these craziness will settle down a little bit and I will soon be able to experiment with more recipes and blog more about eating and cooking 😉 besides wiping baby’s bottom and changing diapers (which I have gotten very good at and can even do that with my eyes closed and in the darkness).
This super quick quesadillas is one of my favorite quick lunches. Not only it is so quick to make, it is healthy and delicious. I promise you’ll be out of kitchen in no time. Simple and quick do not mean you have to sacrifice taste and look though 😉 The addition of spring onion, jalapeno and cilantro make huge differences to the overall taste. You gotta try this super quick quesadillas to know what I mean. We love it !
- 1 round or square whole-grain/multi-grain tortilla wrap/flat bread I use square multi-grain wrap
- 2-3 thin slices of deli ham/turkey
- 1/4 cup of grated cheese
- 1/4 cup of chopped spring onion
- 1 small bunch of fresh cilantro leaves
- 1-2 Tbsp of chopped fresh jalapeno peppers if you don't want any spicy, skip this or more if you like it hot
- Olive oil or grapeseeds oil for brushing
Preheat a grill pan or regular large non-stick pan if you don't have a grill pan
Place one wrap on a working surface. Place slices of ham/turkey at one side of the wrap. Sprinkle the jalapeno peppers over the ham, followed by spring onions, cilantro leaves and grated cheese. Fold the other half over to form a half circle or half square. Brush one side with olive oil and place on a very hot grill and use a spatula to gently press the top of the quesadillas and let it grill for a minute or two (the cheese should be melted inside). Brush with olive oil and flip over to the other side and press on it again like you did and let it grill for another minute. transfer to a serving plate and serve immediately
