  • Place the eggs and sugar in a large mixing bowl. Whisk until the sugar has dissolved. Add in the coconut milk and stir again to mix. Add in both flours and salt into the bowl and stir until you get a smooth batter without lumps. Strain this batter into another bowl
  • I use Pizzelle maker and follow the instruction to preheat the device. Since this maker make 2 pizzelle at one go, I spoon 1 Tbsp into the middle of each mould and quickly and carefully close the maker and timed it to cook at 1 minute and 10 seconds. If your maker only make 1, use 2 Tbsp instead
  • After 1 minute and 10 seconds, open the cover and use rubber spatula to lift one up and quickly fold it into a half and then half again, so you get the quarter look. Place a heavy pan on top of it. Then quickly lift another one up from the maker (mine makes 2 pizzelle at a time remember?) and roll it into a log. Move them to a cooling rack and continue with this process until you run out of batter
  • If you want to make them into red color, simply drop red food coloring. How much of it depends on how red you want them to be
  • Store them in an air-tight container or they will get soggy especially if the humidity is high. I have no problem with humidity now because it''s winter :)
