4cupscooked long-grain ricemade with 2 cups of long-grain rice + 1 3/4 cups of water
2boneless skinless chicken thighscut into 1-inch cubes
2Tbspmargarine or butter
1medium onionpeeled and diced
2clovesgarlicpeeled and minced
1Tbspground coriander seeds/Ketumbar
1Tbspgalangal/Laos powder
1tspshrimp paste/terasi
Bird’s eyes chilias many or as little as you want, chopped
3Tbspsweet soy sauce/kecap manis
2Tbspsoy sauce or to taste
Garnishes:
1stalk spring onion -optionalchopped
Slicesof tomatoes and cucumbersoptional
Omelette (optional)
2eggsbeaten
1Tbspof water
Pinch of salt and freshly ground black pepper
1Tbspof oildivided
Instructions
Preparing the rice:
Cook your rice with rice cooker or if you don’t have one, put a washed rice in a saucepan and add the water. Bring to the boil and simmer uncovered until all liquid has been absorbed and the rice is cooked through and fluffy. Set aside to cool down completely. It’s best you do this overnight
Preparing the omelette:
Mix all the ingredients for the omellete, except for the oil. Preheat a small non-stick pan again add in 1/s Tbsp of the cooking oil. Pour in half of the egg mixture onto the middle of the pan and swirl the pan to cover the surface evenly. Let it cook until the bottom is no longer runny, gently flip it over to the other side. if they break apart, that's okay, it doesn't have to be in large circle. Let the other side cook to golden brown. Remove and place on a plate. Place another 1 Tbsp of oil into the pan again and repeat with the rest of the egg mixture. When cool enough to handle, slice the omelette into strands. Set aside
Making the fried rice:
Preheat a wok or large pan. Melt the butter. Add chicken and cook until it starts to change in color, add in onions and saute until onions are soft and fragrant
Add in garlic, coriander, galangal, and shrimp paste. Saute until fragrant and then add in the chopped chili and fry for another minute
Add in the rice. Add sweet soy sauce and soy sauce and mix well, so the rice picks up the brown color from the soy sauces. Remove from the heat. Garnish with the chopped spring onion and omelette and serve immediately
Indonesian-style fried rice is normally served with prawn crackers and vegetable such as sliced cucumbers or even sliced tomatoes on the side
