1round or square whole-grain/multi-grain tortilla wrap/flat breadI use square multi-grain wrap
2-3thin slices of deli ham/turkey
¼cupof grated cheese
¼cupof chopped spring onion
1small bunch of fresh cilantro leaves
1-2Tbspof chopped fresh jalapeno peppersif you don't want any spicy, skip this or more if you like it hot
Olive oil or grapeseeds oil for brushing
Instructions
Preheat a grill pan or regular large non-stick pan if you don't have a grill pan
Place one wrap on a working surface. Place slices of ham/turkey at one side of the wrap. Sprinkle the jalapeno peppers over the ham, followed by spring onions, cilantro leaves and grated cheese. Fold the other half over to form a half circle or half square. Brush one side with olive oil and place on a very hot grill and use a spatula to gently press the top of the quesadillas and let it grill for a minute or two (the cheese should be melted inside). Brush with olive oil and flip over to the other side and press on it again like you did and let it grill for another minute. transfer to a serving plate and serve immediately
