Preheat a wok or skillet. Add in 2 Tbsp of olive oil. Add in the onion and stir-fry until the onion is tender. Add in the garlic and ginger and stir-fry for another 10 seconds. Add in the green, red and yellow bell pepper. Stir-fry for about 1-2 minutes until they are tender but still slightly crunchy
Add in the sweet peas, wine and soy sauce. Continue to saute for another minute. The sweet peas should still be crunchy. Add in the shrimp and cooked until they turn color, don't over cook them or they will be tough. Have a taste and add more soy sauce if needed. Turn off the heat and turn onto a serving platter and serve immediately
