GRILLED KAFTA

Ingredients

  • 1/2 lb well-marbled leg of lamb or loin cut
  • 1/2 lb lean ground beef
  • 1 large onion
  • 1 tsp salt
  • 1 tsp of freshly ground black pepper
  • 1 tsp all-spice powder
  • 1/2 cup chopped fresh parsley leaves
  • TO SERVE WITH:
  • Flat bread or split-hamburger buns
  • Fresh tomatoes (sliced)
  • Lettuce
  • Plain yogurt
  • Ground sumac
  • Pickles
  • Cayenne pepper

Instructions

  • In a food processor, process the lamb and onion into a paste. Mix these along with the beef, salt, pepper, all-spice powder, and parsley
  • Divide the Kafta into 6 equal portions and roll each into a ball and then flatten into a patty about 1/2-inch thick
  • Prepare a gas or charcoal grill, or you can use a broiler. Grill or broil the patties, about 4-5 minutes on each side, turning them once
  • Sprinkle a bit of ground sumac on top of the grilled kafta. Serve with flat breads or hamburger buns along with the condiments
