Wash the potato and sweet potatoes and halve lengthways. Put them into a large microwave-safe bowl with 1/2 a lemon. Cover with cling wrap and put into the microwave on full power for 15 minutes
Preheat your oven to 400 F. Wash the potato and sweet potatoes. Wrap them individually in aluminum foil and place in the oven and roast for about 45 minutes to 1 hour (this depends on how big your potatoes are). You can check by piercing with fork, if they are tender, they are cooked. Put in the lemon for the last 15 minutes of roasting
Finely chop the red chili and most of the coriander on a board, mixing as you go. Add the feta cheese and keep chopping and mixing
Use a tong to squeeze the cooked lemon over the potatoes Add the coriander mixture above and mix everything together with a fork. Taste and add some salt of pepper if needed
