About 8-10 steamed rice rolls / chee cheong funcut into 3-4-inch pieces and gently toss with a bit oil
2clovesgarlicfinely minced
2eggs
About 10 large shrimpsshelled and deveined
1Tbspof dark soy sauce
3Tbspof soy sauce or more to taste
Dash of white pepper powder
2stalks of spring onionfinely chopped
4Tbspof grape seeds oil or oil of your choice
Instructions
Preheat a wok or skillet until really hot. Pour in the oil. Crack in the eggs and don't stir it just yet, let it cook for about 1 minute and then stir to break it up and then push to the side of the wok or skillet. Add in the garlic and stir fry for about 10 seconds. Add in the shrimp and cook until they turn pink. Add in the chee cheong fun and the seasonings. Stir to mix everything. Have a taste and add more soy sauce if needed
Dish out and sprinkle with spring onion and serve immediately
