Spread Hellmann's® Real Mayonnaise on both sides of the Farmhouse Sourdough bread. If you want a little kick, mix Hellmann's® Real Mayonnaise with about 1 Tbsp of sriracha chili sauce before spreading on the bread
Place about 2 oz of Hillshire Farm® Thin Sliced Honey Ham on the bread. Top with another piece of bread. Continue assembling the rest of the sandwiches
Preheat oven at 200 F. Preheat a nonstick skillet/grill pan on medium heat. Place the sandwich on the pan and I would suggest to use a heavy heat-proof object like another heavy pan or glass container to "weigh down" the sandwich. Watch the heat. I lower it down to low and let it cook for about 3 minutes until nicely golden brown on one side and then carefully turn over to the other side, weight it down again and cook for another 3 minutes. Remove from the pan to a serving platter. Repeat with the rest of the sandwiches and keep them warm in the oven while you are cooking the rest
In the same skillet, scatter the grated cheese thinly on the skillet. Increase the heat a little bit. The cheese will start to bubble and melt. Place the sandwich you cooked earlier on top of this melted cheese and let it cook for another 1 to 1 1/2 minutes. The melted cheese will start to crisp up a bit. Use a rubber spatula to remove the sandwich from the pan. Don't be afraid that you will "break" the cheese layer. Repeat with the rest of the sandwiches. Place this back on serving platter and serve immediately.
