4cupsfresh sweet corn kernelsif use frozen, use the same amount and thawed and drain off excess liquid
10bacon slicesroughly chopped
1package cream cheese8-ounce, at room temperature, cut into smaller cubes
1large onionfinely chopped
½cupchopped red bell pepper
½cupchopped green bell pepper
¼cupheavy cream
1teaspoonsugar
Pinch of salt and freshly ground black pepper
Instructions
In a large skillet, cook the chopped bacon until they are crispy. Remove and place on paper towel to absorb extra grease. You will end up with the bacon drippings in the skillet. Add in onion and bell pepper and saute until fragrant and vegetables are soft. Add in the corn and saute for another minute. Add in the cream cheese, heavy cream and stir to mix everything. The cream cheese will gradually melt and the mixture will become thicker. Add in sugar and pinch of salt and pepper. Have a taste and adjust as you like
Transfer the corn mixture into serving platter, scatter the crispy bacon on top of the dish and serve warm
