Preheat a large skillet or wok with cooking oil. Add the garlic and white part of green onion and saute for about 10 seconds, take care not to burn the garlic.
Add the mushrooms and saute for about 30 seconds.
Add the pork or whatever meat you choose to use and saute until they just start to turn color. Add the shrimp (if using, I didn't use here) and saute again until they just start to turn pink.
Drizzle in the wine and scrape the bottom of the pan of any bits and pieces stuck to the pan. Add chicken broth followed by the seasonings. Bring the broth to a boil
Combine cornstarch with water to make a slurry paste. Add the cornstarch slurry while stirring at the same time. The gravy starts to thicken. Have a taste and adjust seasonings to your preference.
Add the tofu pieces and let it simmer for another minute. Remove from the heat. Transfer it to a serving dish, garnish with chopped green onion and serve immediately
