This easy and delicious Indonesian-style braised tofu is a tofu dish you will enjoy eating. It is so simple to make but very satisfying.
What is mun tahu ?
Mun tahu means braised tofu in the Hakka dialect. Mun tahu is an Indonesian-Chinese tofu braised with ground meat (and sometimes seafood) served in thick white gravy. It is a tofu dish with Chinese influence and then adapted by the locals to be what it is today. Mun tahu bears some similarities with the Chinese mapo tofu. Mapo tofu uses dou ban jiang (fermented chili bean paste), chili oil, and Sichuan peppercorns that make the dish spicy and numbing at the same time. Mun tahu doesn’t use any of that and the dish isn’t meant to be spicy. Mun tahu is a popular dish for home cooks and is also served in restaurants in Indonesia. It is a popular dish loved by many.
Braised Tofu with Ground Meat (Mun Tahu)
Ingredients
- 600 g silken tofu cut into 1-inch cubes
- 200 g ground pork or use chicken or beef
- 2 large dried shiitake mushrooms soaked in warm water, diced
- 100 g shrimp optional, peeled, deveined, diced
- 500 g chicken broth
- 2 Tbsp oil
Aromatics:
- 4 cloves garlic minced
- 2 stalks green onion white parts only, finely chopped
Seasonings: (adjust to your taste)
- 1 Tbsp oyster sauce
- 2 tsp soy sauce
- ½ tsp fine sea salt
- 2 tsp sesame oil
- 1 tsp sugar
- 1 Tbsp cooking wine
- ¼ tsp ground white pepper
To thicken the gravy:
- 2 Tbsp cornstarch
- 2 Tbsp water
Garnish:
- green onion green part, finely chopped
Instructions
- Preheat a large skillet or wok with cooking oil. Add the garlic and white part of green onion and saute for about 10 seconds, take care not to burn the garlic.
- Add the mushrooms and saute for about 30 seconds.
- Add the pork or whatever meat you choose to use and saute until they just start to turn color. Add the shrimp (if using, I didn't use here) and saute again until they just start to turn pink.
- Drizzle in the wine and scrape the bottom of the pan of any bits and pieces stuck to the pan. Add chicken broth followed by the seasonings. Bring the broth to a boil
- Combine cornstarch with water to make a slurry paste. Add the cornstarch slurry while stirring at the same time. The gravy starts to thicken. Have a taste and adjust seasonings to your preference.
- Add the tofu pieces and let it simmer for another minute. Remove from the heat. Transfer it to a serving dish, garnish with chopped green onion and serve immediately
