Learn how to make this spicy and sweet chicken originated in the Island of West Nusa Tenggara in Indonesia. I'm sharing how to cook the chicken on the stove or in the pressure cooker.
Lightly season the chicken with a bit of salt of pepper. Rub it all over the chicken pieces. Proceed to either pressure cook or cook the chicken on the stove
Pressure cook the chicken:
I use bone-in chicken drumsticks. Pour 1 cup of water in the inner pot of instant pot. Place a steaming rack on top. Put the chicken pieces on top. Close the lid and turn the steam release valve to "sealing". Set the timer to 15 minutes. Release pressure immediately after
Cook the chicken on the stove:
The chicken is usually fried. Cutting the chicken into smaller pieces helps to cook the chicken faster. Heat up enough oil to fry the chicken until they are cooked through. Alternatively, you can also boil the chicken until cooked through (my least favorite way as the chicken is tasteless this way)
Start cooking:
Melt the butter in a wok or skillet. Add onion and saute until the onion is soft and fragrant. Add garlic and stir fry for about 30 seconds. Add the chili and stir fry for about 10 seconds. Add the precooked chicken followed by seasonings. Have a taste. It should be sweet, spicy, with a bit of tartness. Serve immediately
