Learn how to make this spicy and sweet chicken originated in the Island of West Nusa Tenggara in Indonesia. I’m sharing how to cook the chicken on the stove or in the pressure cooker.
Lombok is lesser-known compared to Bali, which is more well-known than Indonesia as a country itself 🙂 Lombok is located in the Island of West Nusa Tenggara, which is a neighbor of Bali. I’ve never been to Lombok myself, but it is incredibly beautiful is what I heard.
Most of the Indonesian dishes are spicy, though that’s not always the case though. Ayam masak lombok is one of the popular Lombok dishes, besides Ayam Taliwang. It has a sweet taste, from kecap manis, and also hot spicy thanks to the chilis at the same time.
Unlike typical Indonesian recipe, which requires quite a long list of spices and herbs, Lombok cuisine is much more simpler when it comes to ingredients. Take this ayam masak Lombok as an example. It only needs a few ingredients that can be easily found. This ayam masak Lombok is quite similar to ayam goreng mentega. Ayam goreng mentega is not spicy and uses a bit more butter/margarine in the recipe.
HOW TO COOK AYAM MASAK LOMBOK
1. Lightly season the chicken with a bit of salt of pepper. Rub it all over the chicken pieces. Proceed to either pressure cook or cook the chicken on the stove
2. I pressure cooked the chicken. Pour 1 cup of water in the inner pot of instant pot. Place a steaming rack on top. Put the chicken pieces on top. Close the lid and turn the steam release valve to “sealing”. Set the timer to 15 minutes. Release pressure immediately after
3. Melt the butter/margarine in a wok or skillet
4. Add onion and saute until the onion is soft and fragrant. Add garlic and stir fry for about 30 seconds.
5. Add the chili and stir fry for about 10 seconds
6. Add the precooked chicken followed by seasonings
7. Have a taste. It should be sweet, spicy, with a bit of tartness. Serve immediately

Ayam Masak Lombok (Spicy and Sweet Chicken)
Ingredients
- 1 kg bone-in chicken pieces (about 2 1/2 lbs) drumsticks, thighs, or cuts of your choice
- Cooking oil if you choose to fry the chicken
- 2 Tbsp butter or margarine
- 4 red chilis (thinly sliced) or use 3-4 Tbsp of sambal oelek
- 3 Thai chilis optional (thinly sliced)
To season chicken pieces:
- Salt to taste
Aromatics:
- 1 large onion peeled and sliced
- 2 cloves garlic minced
Seasonings:
- 5 Tbsp kecap manis
- Salt to taste
- Juice of one lime
Instructions

Pressure cook the chicken:
- I use bone-in chicken drumsticks. Pour 1 cup of water in the inner pot of instant pot. Place a steaming rack on top. Put the chicken pieces on top. Close the lid and turn the steam release valve to "sealing". Set the timer to 15 minutes. Release pressure immediately after
Cook the chicken on the stove:
- The chicken is usually fried. Cutting the chicken into smaller pieces helps to cook the chicken faster. Heat up enough oil to fry the chicken until they are cooked through. Alternatively, you can also boil the chicken until cooked through (my least favorite way as the chicken is tasteless this way)
Start cooking:
- Melt the butter in a wok or skillet. Add onion and saute until the onion is soft and fragrant. Add garlic and stir fry for about 30 seconds. Add the chili and stir fry for about 10 seconds. Add the precooked chicken followed by seasonings. Have a taste. It should be sweet, spicy, with a bit of tartness. Serve immediately
