This creamy miso curry risotto is my Asian-fusion take on the classic Italian rice dish. I love how creamy risotto gets as the rice slowly cooks in broth, and I’m also a big fan of using miso in my cooking and baking. Here, miso adds a savory umami flavor, while a little curry powder brings warmth without overpowering the dish. Coconut milk ties everything together with a subtle richness that pairs beautifully with the miso and curry.
You can serve this as a comforting main dish or as a side dish alongside your favorite protein. If you aren’t a fan of coconut milk, heavy cream works well, too.

Risotto is a traditional Italian rice dish known for its creamy texture. - Red miso paste: Red miso adds deep, savory umami flavor. You can substitute white miso for a milder, slightly sweeter taste, though the finished risotto will have a more delicate flavor.
- Unsalted butter: Butter adds richness when sautéing the onion. Olive oil can be used instead.
- Onion: Diced onion adds sweetness and savory depth. Yellow or white onion works well.
- Parmesan cheese: Freshly grated Parmesan adds a salty, nutty flavor and helps create a creamy finish. Pecorino Romano can be used for a sharper, saltier flavor, but reduce the additional salt accordingly.
- Curry powder: Curry powder adds gentle warmth and fragrance. Adjust the amount to your preference, or use a mild curry blend if you want the miso flavor to remain prominent.
- Canned coconut milk: Coconut milk complements the curry and miso while adding richness. Substitute heavy cream if you prefer a more traditional dairy-based flavor. For a lighter result, use a little extra broth, although the risotto will be less rich.
- Salt and black pepper: Season to taste. Miso, broth, and Parmesan already contain salt, so taste the risotto before adding more.
- Fresh cilantro (optional): Chopped cilantro adds freshness and complements the Asian-inspired flavors. You can omit it or substitute chopped parsley if preferred.
How to make creamy miso curry risotto
- Prepare the miso broth. Dissolve the red miso paste in about 1 cup of warm chicken broth, stirring until no large lumps remain. Add the remaining broth and set aside. Keep the broth warm while cooking.
- Sauté the onion. Melt the butter in a heavy-bottomed pot over medium heat. Add the diced onion and sauté for 5–8 minutes, until softened and lightly charred in a few spots.
- Toast the rice. Add the Arborio rice and stir continuously for about 2 minutes, coating the grains with the butter and onion. This step helps warm the rice and builds flavor before adding the broth.
- Gradually add the broth. Add about ½ cup of the warm miso broth at a time, stirring frequently and scraping the bottom of the pot. Let the rice absorb most of the liquid before adding the next portion.
- Continue cooking slowly. Repeat the process, adding broth in small amounts and stirring frequently. This takes about 35–40 minutes for this recipe, depending on your stove and the texture you prefer. The rice should become tender while retaining a slight bite in the center. If you run low on broth before the rice is ready, add a little more warm broth or hot water.
- Add the curry and coconut milk. Once the rice is nearly tender and the risotto looks creamy, stir in the curry powder and coconut milk. Cook for another minute, then taste and season with salt and pepper as needed.
- Finish with Parmesan. Turn off the heat and stir in the grated Parmesan until melted and incorporated. Taste again and adjust the seasoning to your liking. If the risotto seems too thick, stir in a splash of warm broth to loosen it.
- Garnish and serve. Sprinkle with chopped fresh cilantro, if using, and serve warm.

- Keep the broth warm. Warm broth helps maintain a steady cooking temperature when you add it to the rice.
- Be patient with the liquid. Add the broth gradually rather than pouring it all in at once. Letting the rice absorb the liquid between additions is central to the risotto technique.
- Stir frequently, but you don’t need to stir nonstop. Regular stirring helps release the rice’s starch and prevents sticking. You can briefly step away, but keep an eye on the pot and stir often.
- Serve it right away. Risotto thickens as it sits. Keep a little extra warm broth handy to loosen it just before serving.

Creamy Miso Curry Risotto
Ingredients
- 1 Tbsp unsalted butter
- 1 small onion diced
- 360 g arborio rice
- 5 cups warm chicken broth plus more as needed
- 2 ½ Tbsp red miso paste
- 1 cup Parmesan cheese grated
- 1 tsp curry powder more or less according to your taste
- ½ cup canned coconut milk
- Salt and pepper to taste
Instructions
- Dissolve the miso paste in about 1 cup of the warm chicken broth. Once dissolved, add the rest of the chicken broth and set aside

- Melt 1 Tbsp unsalted butter in a heavy-bottom pot. Saute onion for 5-8 minutes until soft and lightly charred here and there

- Add the rice and keep stirring for about 2 minutes

- Slowly add the chicken broth, 1/2 cup at a time, stirring and scraping the bottom of the pot each time until the rice absorbs it before adding more.

- This whole process takes about 35-40 minutes. Do not rush it. You want the rice to gradually absorb the liquid and get cooked at the same time

- Add the curry powder, coconut milk, salt and pepper, and cook for another minute. It should have a creamy texture

- Turn off the heat. Stir in the cheese and give it a good stir and have a taste. Adjust to your taste preference

- Garnish with chopped fresh cilantro leaves. Serve warm. I like to add some chili crisp (optional, I'm obsessed with chili crisp!)
