I made this creamy corn casserole for a Thanksgiving get-together with friends and it was quite a big hit! I personally adore corn, especially the sweet corn here in North America. They are incredibly sweet. Love it! The creamy corn casserole is so easy to whip up too and simply perfect as a side dish for any occasion.
CREAMY CORN CASSEROLE
Ingredients
- 4 cups fresh sweet corn kernels if use frozen, use the same amount and thawed and drain off excess liquid
- 10 bacon slices roughly chopped
- 1 package cream cheese 8-ounce, at room temperature, cut into smaller cubes
- 1 large onion finely chopped
- ½ cup chopped red bell pepper
- ½ cup chopped green bell pepper
- ¼ cup heavy cream
- 1 teaspoon sugar
- Pinch of salt and freshly ground black pepper
Instructions
- In a large skillet, cook the chopped bacon until they are crispy. Remove and place on paper towel to absorb extra grease. You will end up with the bacon drippings in the skillet. Add in onion and bell pepper and saute until fragrant and vegetables are soft. Add in the corn and saute for another minute. Add in the cream cheese, heavy cream and stir to mix everything. The cream cheese will gradually melt and the mixture will become thicker. Add in sugar and pinch of salt and pepper. Have a taste and adjust as you like
- Transfer the corn mixture into serving platter, scatter the crispy bacon on top of the dish and serve warm
