This simple recipe is my all-time favorite. So easy to make when you don’t have much time to spend cooking up a storm in the kitchen. You get your fiber and protein at the same time 😉
GREEN BEANS OMELETTE
Ingredients
- 4 eggs beaten
- 10 string of green beans finely chopped and blanched
- Salt and Pepper
- 3 Tbsp of Canola oil
- 2 cloves garlic finely chopped
Instructions
- Preheat your non-stick large pan with oil. Saute garlic until fragrant for about 10 seconds. Add in the green beans that you have previously blanched and continue to saute for another 1 minute
- Add in the beaten egg and swirl to cover the pan and spread the green beans to make sure they are evenly distributed. Lower the heat and let the eggs slowly cooked. You know it's ready to be flipped when it's no longer runny. You can either flip the entire omelette (I am no good at this), or you can cut into half or even 4 equal pieces and flip them one by one. Let the eggs cooked again. Transfer to a serving plate

Delicious 😋 my family loved it, healthy. I steamed the green beans The day before in the rice cooker and for my guys at home I added some diced beef Kielbasa sausage on the side. Thank you

I’ve mad this, and it’s good, especially with fresh garden beans. I blanch first.
i’m glad you like it Andrew. Blanching the beans is a good idea too. Stir-frying them first give them that extra crunch 🙂
My mom used to stir fry eggs with green beans, not omelet, but she made omelet with chives (kuchai). Simple home cooking.
