This rice puff cereal with its sweet and hint of umami features lots of healthy nuts and seeds are great for morning on the run, or as a snack. Made without any refined sugar.
I always have a soft spot for bars with nuts, seeds, and some dried fruit. I love all the different textures. If you are like me, craving for something with a bit of crunch but not loaded with refined sugar and other highly processed ingredients, give this one a try!

1. No weird ingredients
Well, maybe you can say miso is weird LOL! but it is not. Miso paste has been used by the Japanese for the longest time and it is considered one of the superfoods for our guts. Unlike the majority of store-bought bars, which are loaded with highly processed ingredients, there is no highly processed ingredients used to make this bar
2. Taste and texture
I love the sweet and salty combinations in one bite. The texture comes from different ingredients is also what I like in this bar. There are some crisp from the cereal, chewiness from dried fruits, some crunch from the nuts and seeds
Ingredients and substitutions
1. Brown rice syrup
If you don’t have one, you can use date syrup, maple syrup, agave nectar, or honey
2. White miso paste (shiro miso)
Also known as shiro miso. Even though it’s called white miso, but it’s not white in color. It has a sweeter and milder taste compared to aka miso (red miso). Red miso is much more intense and saltier. I don’t recommend using red miso. If you can’t find white miso paste, the next best substitution would be awase miso, which is a combination of white and red miso
3. Oil
You can use any neutral-tasting oil
4. Puffed rice cereal
The easiest puffed rice cereal to find here in the U.S. is the Rice Krispies cereal by Kellogg’s. You can also use puffed brown rice cereal or puffed quinoa or other puffed grains
5. Peanuts
I use dry-roasted but not salted peanuts. You can use any nuts of your choice. Make sure to chop them finely so the bar won’t fall apart when you try to cut it later
6. Dried fruits
I use dried cranberries and raisins. Feel free to use anything you like or skip it and replace the amounts with more nuts and/or seeds
7. Seeds
I use sesame seeds. Feel free to use other seeds like pumpkin seeds and sunflower seeds. Make sure to chop them into smaller pieces
8. Salt
I use fine sea salt
Miso Puffed Rice Cereal Bars
Ingredients
- 100 g brown rice syrup or maple syrup
- 2 Tbsp white miso paste
- 1 Tbsp avocado oil or other healthy oil of your choice
- ⅛ tsp fine sea salt
- 80 g puffed rice cereal
- 150 g peanuts roasted unsalted, finely chopped
- 20 g dried cranberries chopped
- 20 g raisins chopped
- 40 g sesame seeds white and/or black sesame seeds
Instructions
- Preheat the oven to 325 F (160 C) for conventional oven, 300 F (150 C). If you do a full recipe, grease 8 x 8 inch square pan and then line with parchment paper, overlapping horizontally and vertically. If you only do half of the recipe, you can use 8 x 4 inch loaf pan
- Put all the dry ingredients in a large mixing bowl and set aside. You can replace the nuts, seeds, dried fruit with what you like, just keep the quantity the same and chop them into smaller pieces so the bar won't fall apart when you try to cut it
- Put syrup in a saucepan. Heat it up over medium-low heat until it just started to boil. Turn off the heat and add miso paste and oil. It's easier to use a whisk to combine them
- Pour the syrup mixture over the dry ingredients
- Stir until all are coated with the syrup.
- Transfer this to a prepared pan. Cover with a piece of parchment paper and really pack it down to make sure the mixture is compacted so the bar won't fall apart later
Baking:
- Bake in a preheated oven for 18-20 minutes, rotate the pan halfway through baking so it bakes evenly
- Let the cool completely in the pan set over a cooling rack. Do not attempt to cut while it's still warm because it may fall apart
Serving:
- Cut with a sharp knife (do not use a serrated knife). Don't drag it when you cut. Just one clean cut from top to bottom. Cut into 9 large squares or 12 smaller ones. It's your call!
Storing:
- The bars can be kept in an air-tight container for up to 3 days. They freeze well. Simply transfer them to freezer-friendly bags or container and they can be kept in the freezer for about 2 months. Simply thaw at room temperature before serving
