Pasta and Shrimp Parcels is really an ideal dish if you have guest coming over for dinner. The parcels can be prepared in advance, then put in the oven when you guys are ready to chow. Besides, I love the idea of unwrapping your food on the dinner table. It’s fun 🙂
This is another great recipe I tried from 1000 Classic Recipes from Around the World edited by Jo-Anne Cox and Elizabeth Towers.
PASTA AND SHRIMP PARCELS ( 4 servings)
1 lb dried fettucine/spaghetti
2/3 cup marinara sauce or pesto sauce
4 tsp extra virgin olive oil
1 lb 10 oz large raw shrimp, peeled and deveined
2 garlic cloves (crushed)
1/2 c dry white wine
Salt and Pepper
COOKING METHOD:
1. Cut out 5×12 inch squares of wax paper
2. Bring a large saucepan of lightly salted water to a boil. Add the pasta and cook for 2-3 minutes, until just softened. Drain and set aside
3. Mix together the pasta and half of the sauce. Spread out the paper squares and put 1 tsp olive oil in the middle of each. Divide the pasta among the squares, then divide the shrimp and place on top of the pasta
4. Mix together the remaining sauce and garlic and spoon it over the shrimp. Season each parcel with salt and black pepper and sprinkle with the white wine
5. Dampen the edges of wax paper and wrap the parcels loosely, twisting the edges to seal
6. Place the parcels on a cookie sheet and bake in preheated oven at 400 F for 10-15 minutes. Transfer the parcels to 4 individual serving plates or let your guests unwrap their own parcels
