I was looking for something fun, easy to eat and something that most people are familiar with and I saw this Pepperoni Pizza Puffs at Susi’s blog. I thought I gave it a try and I’m glad I did. They are so easy to make and fun to eat, bite size snacks!!
PEPPERONI PIZZA PUFFS (24 Puffs)
3/4 C flour
3/4 tsp baking powder
3/4 C milk (I used 1 %)
1 egg, lightly beaten
1/4 tsp Kosher salt
1 tsp Italian seasoning
4 oz mozzarella cheese, shredded
4 oz pepperoni (I used Turkey pepperoni), cut into small cubes
1/2 – 1 C of your favorite pizza or marinara sauce
2 Tbsp finely chopped fresh basil
COOKING METHOD:
1. Preheat oven to 375 degrees F. Grease a 24-cup mini muffin pan
2. In a large owl, whisk together the flour and baking powder; whisk in the milk, egg, salt and Italian seasoning. Stir in the mozzarella and pepperoni; let stand for 10 minutes
3. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes
4. Warm your pizza or marinara sauce, then stir in 1 tablespoon basil. Sprinkle the puffs with the remaining 1 tablespoon basil. Serve the puffs with the pizza sauce for dipping
