Artichoke sure looked like an unidentified foreign object to me when I first saw it at the grocery store decades ago. I never grew up with artichoke. It pretty much did not exist where I grew up. Then I became a housewife. Struggling with what to cook everyday. Saw fresh artichoke but I seriously did not know what to do with it. I bought artichokes in jars, which pretty much already deconstructed in a way I know how to handle them. One day many years ago, I decided it’s time to get the real stuff !!! and I never looked back ! Fresh artichoke it is ! I love this stuff. I love it even more when you prepare it from fresh. With summer making its way in, we are going to be grilling lots of these babes !!
How to make roasted whole artichoke and garlic (about 1 cup)
Ingredients
- 4 fresh artichokes
- 8 cloves garlic peeled
- Cooking oil
- Juice of 1/2 lemon
- Pinch of salt
Instructions
- Preheat oven to 425 F. Give the artichokse some rinse of water. Pat dry. Trim off about 1-inch of the top of the artichoke and the bottom
- Grab 4 pieces of heavy-duty aluminum foil, large enough to wrap the artichoke. Place the artichoke on the foil. Tuck in about 2 garlics on each artichoke. Drizzle some oil over the top. Give a squeeze of lemon juice over it. Pinch of salt. Wrap the foil around the artichoke nicely. Repeat with the rest of artichokes
- Place inside the oven and roast for the next 1 hour or maybe a bit longer. The artichoke should be soft by the end of cooking time. Carefully unwrap the foil and when they are cool enough to handle, remove the outer shells until you get to the middle where you will see the heart. Remove the outer layer of the heart and then scoop out the delicious heart and mash it with the roasted garlic. Spread it on top of toast, crackers, or eat them like that
What’s your favorite ways of eating them ? We spread them on crusty bread, toast, crackers. I ate them just like that too 🙂 Below you see that we served them on Bruschetta with slices of hard-boiled egg and fresh dill. OMG ! the best thing ever !! We ate them for breakfast 🙂

Fresh artichoke is the best! Love how you roasted them with garlic and a squeeze of lemon – yum!
I just love you pictures, all of them! I only bought artichokes once, many years ago and wasn’t really impressed, I thought they were way too expensive for the little bit you get out of them. But seeing these pictures make me want to give them another try soon.
