Chicken thighs and drumstick are my favorite parts to use in cooking 😉 Yes, they are dark meat, which means, moist and tender compare to the breast. I have to tell you though that most Asians (most, not all) do not like to cook with chicken breast. The meat is tougher (because it’s leaner, I get that). Even my daughter can immediately tell the difference if I give her chicken breast and chicken thighs lol. I like to use bone-in and leave the skin on when cooking with dry heat, in this case, roasting because those help the chicken from drying out. I just removed the skin and try my best not to eat too much of it lol! But I still have a juicy meat underneath the skin. This roasted chicken with Greek yogurt sauce is super easy to make and trust me, you’ll love that Greek yogurt sauce. It’s thick and creamy and packed with lots of flavor from the herb. Try it and you gonna like it 🙂
ROASTED CHICKEN WITH GREEK YOGURT SAUCE
Ingredients
- 12 chicken thighs (bone in and with skin on)
- Juice of 1 lemon
- ¼ cup of olive oil
- Salt and Pepper
Greek yogurt sauce:
- 2 cups of plain Greek yogurt
- 2 cloves garlic (peeled and finely minced)
- 4 stalks of spring onion (finely chopped)
- ½ English cucumber (peeled and finely diced)
- 2 Tbsp of chopped fresh cilantro
- 2 Tbsp of chopped fresh mint leaves
- 2 Tbsp of chopped fresh dill
- Salt and pepper to taste
Instructions
- Preheat your oven to 400 F. Place the chicken on a shallow roasting pan (skin side up). Pour the lemon juice and olive oil over the chicken. Add a pinch of salt and pepper. Rub this all over the chicken. Pop this into the oven and let it roast for the next 45 minutes to 1 hour or until the chicken is cooked through and have nice golden brown color
- Meanwhile, prepare the Greek yogurt sauce by mixing all the ingredients for the sauce. Have a taste and add more salt and pepper if needed. Chill in the refrigerator while waiting for the chicken. When ready to serve, serve the chicken with the sauce on the side
