Waffles that are crisp at the edges and chewy at the center and infused with mashed bananas are something to look forward to start the day! The recipe is naturally gluten-free.
What is a mochi waffle?
They are waffles with a texture that resembles the soft and chewy mochi. How is this possible? The use of mochiko flour, also known as glutinous rice flour/sweet rice flour, contributes to that texture
Are these the same as the Japanese Moffle ?
No, they are not in terms of ingredients. The Japanese moffle are made using mochi dough or store-bought ready-to-eat mochi. You put the mochi in the waffle maker and bake until they are crispy. These mochi waffles are made more like American-style waffles but instead of all-purpose flour, mochiko flour is used instead. So it is also naturally gluten-free.
Banana Chocolate Mochi Waffles
Ingredients
Dry ingredients:
- 100 g mochiko flour or glutinous rice flour
- 35 g almond flour
- 10 g cocoa powder
- 1 ½ tsp baking powder
- ⅛ tsp salt
Wet ingredients:
- 200 g very ripe bananas mashed
- 50 g sugar
- 40 g unsalted butter melted
- 30 g milk
- 1 tsp vanilla extract
Optional add ins:
- 60 g mini chocolate chips
Instructions
- You want to use very ripe bananas for the best result, otherwise, the banana flavor won't come through. I don't add much sugar to the waffle recipe because very ripe bananas are naturally sweet
Prepare the batter:
- Preheat your waffle iron while you prepare the batter
- Whisk the mashed bananas, brown sugar, melted butter, milk, and vanilla in a mixing bowl.
- Combine all the dry ingredients in another bowl and add this to the wet.
- Use a spatula to fold to combine halfway and then add the mini chocolate chips if you choose to use, and continue to fold until you don't see any streak of dry ingredients. Take care not to overmix the batter. It will be a rather thick batter. The batter feels light because of the baking powder
Bake the waffles:
- I use my 7-inch round waffle maker. If I use about 3/4 cup of the waffle batter, it yields a full-size waffle and I can probably make about 3 full-size. If I use 1/4 cup of the batter, I can make about 7-8 small waffles
- When the waffle iron is hot, brush with some oil or use non-stick spray
- Scoop the waffle batter (according to the size you want to make) into the waffle maker
- Bake until both sides are golden brown and crisp, which may take about 5 minutes, depending on your waffle iron.
- Remove using a tong from the waffle maker and put on a cooling rack. You can keep them warm in the oven if you plan to serve them soon. I use the "keep warm" function.
Serve:
- Serve them warm with a dust of powdered sugar, maple syrup, or honey if you like
How to store:
- If you don't plan to serve them soon, let them cool down on the cooling rack completely. They can be kept frozen in a freezer bag or a freezer-friendly bag for up to one month. Simply toast in the toaster without thawing

Ingredients and substitutions
1. Glutinous rice flour
You have to use glutinous rice flour or known as mochiko flour. Regular rice flour will not work.
2. Bananas
It is essential to use very ripe bananas. They may look “ugly” with all the black spots on the skin, but these types of bananas are the best for baked goods
3. Almond flour
I use store-bought finely ground almond flour. Almond meal may work too, it will give a more grainy texture
4. Cocoa powder
You can use Dutch or regular cocoa powder for this recipe.
5. Baking powder
Baking powder helps to leaven and make the waffles airy and crisp
6. Milk
I use 2% milk, but you can use dairy or non-dairy milk here
7. Sugar
I use granulated sugar. You can use brown sugar too if you prefer
8. Vanilla extract
An addition of vanilla extract adds a nice overall flavor to the waffles
9. Mini chocolate chips
You can use semi-sweet chocolate chips or milk chocolate chips. This is optional, but you won’t regret adding them
10. Salt
A small pinch of salt will bring out the overall flavor
