Tender pieces of pork chops are cooked in ginger and black pepper sauce. They are so delicious and easy to put together. Perfect for a weeknight or any day of the week.
Mom made me this Chinese black pepper pork chop many years ago when she came to help me with my confinement diet. The recipe is pretty simple and tasty and I still find myself making it on a regular basis for the family. The recipe is suitable for moms who are doing confinement or pretty much anybody else too. My kids love black pepper. I know…my weird kiddos ha..ha..! I’m glad they are very adventurous with food.
What cut of pork chop to use
I use boneless loin chops. They are less flavorful compared to other cuts of pork chop, but they cook pretty quickly and since we will be cooking it in a flavoful sauce, I’m not so concern about using this cut. You just need to be careful not to overcook them. You can also use center-cut loin chop and rib chop
How to cook black pepper pork chop
1. Flatten the pork chop with a mallet or with the back of your knife to tenderize the meat. Mix all ingredients for the marinade and let it marinate for at least 1 hour or overnight
2. Mix all ingredients for seasonings and set aside. Preheat a skillet. Add cooking oil. Pan fry the ginger slices until fragrant, about 1 minute or so, remove from the pan. Then add the pork chop until they are golden brown or cooked through on both sides, about 1-2 minutes on each side
3. Remove pork chops to a serving platter
4. Add the seasonings to the same pan you just cook the pork chops
5. Add the ginger slices back and simmer for another 2 minutes. Have a taste test and adjust to your preference
6. Mix cornstarch with water and pour into the pan to thicken the sauce. Remove from the heat
7. Pour this sauce over the pork chops and garnish with some fresh cilantro leaves. Serve immediately
Tips
1. Use freshly ground black peppercorns if you can. It makes a huge difference (at least to me)
2. Use a mallet or the back of your knife or cleaver to flatten the meat so they are tender
3. Make sure you marinate for at least 1 hour or best yet, overnight, for maximum flavor

- 400 gr Boneless pork loin chop
- 1 Tbsp cooking oil
- 5 slices ginger
Marinate:
- 1 tsp soy sauce
- 1 Tbsp cooking wine
- 1 tsp sugar
- 1 tsp sesame oil
Seasonings:
- 1 clove garlic minced
- 1 tsp ground black pepper freshly ground if possible
- 1 Tbsp soy sauce
- 1 Tbsp cooking wine
- 1 tsp sugar
- 3 Tbsp chicken broth or use water
- Salt to taste
To thicken the sauce:
- 2 tsp cornstarch
- 2 tsp water
Garnish:
- Fresh cilantro leaves
Instructions
