Leftover rendang paste is turned into delicious and addicting nasi goreng rendang you can whip up in less than 15 minutes from start to finish.

NASI GORENG BUMBU RENDANG (RENDANG FRIED RICE)

Nasi goreng makes a frequent appearance in our house, at least once a week. A while ago I wrote How to Make Good Indonesian Fried Rice in case you are interested to know the details. Nasi goreng bumbu rendang is truly one of our favorites. All the work from making Indonesian Beef Rendang Padang won’t go to waste! The leftover thick rendang paste (bumbu rendang) can be made into this delicious nasi goreng rendang. I used the oil from making the rendang to stir fry the nasi goreng and OMG! the flavor is even better!

HOMEMADE OR INSTANT BUMBU RENDANG

Making this nasi goreng rendang with homemade rendang paste and oil is truly the best. The instant version simply cannot compare,but if you don’t cook rendang, you can always buy a store-bought rendang paste and make the fried rice. I won’t punish you 😉 It’s widely available in Asian grocery store. I used the Beef Rendang Padang I made few days before to make this fried rice, and the verdict is super delish.

LET’S GET COOKING

STEP ONE: MAKE THE FRIED EGG FIRST
Preheat the non-stick skillet. Large enough to cook the fried rice later. Add about 1 Tbsp cooking oil. Crack one egg in and fry to your desired doneness. I like the edge crispy and the yolk is still runny 🙂 Basting the white part of the egg with the oil so that the white part cooks through. The whole process takes about 2 minutes

STEP TWO: STIR FRY THE AROMATIC AND BUMBU RENDANG
1. In the same pan, add the rendang oil. Let it melt. Add onion and stir fry until fragrant and soft, about 3 minutes
2. Add the rendang paste and stir fry for another minute. Scrape the bottom of the skillet to make sure nothing got stuck there

3. Add celery and stir fry for another minute. We want the celery to still be crunchy
STEP THREE: ADD THE RICE AND SERVE
Add the rice and continue to stir fry to make sure the rice picks up the rendang paste and the changes color to brownish yellow, another 2 minutes. Add seasonings and adjust to your liking. It should be savory and spicy

DIFFERENT VARIETIES YOU CAN DO WITH THIS NASI GORENG RENDANG

1. Different types of rice/grains: I’ve tried with long-grain brown rice and quinoa
2. Vegetables: You can definitely use frozen mixed veggies (thawed) or no veggies at all
3. Egg: You can cook the egg along with the fried rice so the egg is scrambled with the rice
4. Add meat: You can add leftover chicken pieces, turkey, ham, spam meats, really…anything!

WHAT TO SERVE WITH INDONESIAN FRIED RICE

It’s not unusual to see slices of raw cucumber and tomatoes with Indonesian fried rice. Especially when the fried rice is spicy. The cucumber slices are very refreshing
I like to sprinkle some bawang goreng (crispy fried shallots) with my fried rice. Totally delish!

Ingredients

  • 1 egg
  • ½ small onion peeled and diced
  • 2 Tbsp Bumbu Rendang leftover from rendang Padang
  • 2 Tbsp oil from cooking the rendang
  • 1 stalk celery cut into 1/2-inch slices
  • 2 cups cooked white rice made with 2 cups of long-grain rice + 2 cups of water

Seasonings:

  • Salt to taste
  • ½ tsp sugar

Serving suggestions:

  • Fresh slices of cucumber
  • Fresh slices of tomatoes

Instructions
 

Make fried egg:

  • In the same pan, add the rendang oil. Let it melt. Add onion and stir fry until fragrant and soft, about 3 minutes
  • Add the rendang paste and stir fry for another minute. Scrape the bottom of the skillet to make sure nothing got stuck there. Add celery and stir fry for another minute. We want the celery to still be crunchy
  • Add the rice and continue to stir fry to make sure the rice picks up the rendang paste and the changes color to brownish yellow, another 2 minutes. Add seasonings and adjust to your liking. It should be savory and spicy 
  • Serve immediately as is or garnish with chopped green onions and/or crispy fried shallots (bawang goreng), few slices of cucumber, tomatoes and prawn crackers if any
