BLACKENED CAJUN FISH
My first exposure to blackened fish with cajun seasonings was when we visited New Orleans many moons ago (when I was still in college!). I love it so much because it’s lightly spicy and aromatic from the butter, spices and herb rub that forms this nice crust when cooked on a very hot cast-iron pan.
BLACKENED FISH WITHOUT CAST IRON PAN
Cast-iron pan is usually used to make this blackened cajun fish, however, it can be done with regular non-stick pan too. I used my ceramic non-stick pan to get the nice blackened crust on the fish.
HOMEMADE CAJUN BLACKENED SEASONING RECIPE
I could have easily just gotten the premix cajun seasonings from the store and call it a day, but it’s really not hard at all to concoct your own cajun seasonings rub for fish. Most of the dried herbs and spices are most likely are pretty common in American kitchen. Here are what go into my cajun seasonings rub: onion powder, garlic powder, cayenne pepper (the source of heat), paprika powder, thyme powder, salt and pepper, and melted butter (or cooking oil for a healthier version).
1. MIX ALL THE DRY INGREDIENTS
2. ADD IN MELTED BUTTER OR COOKING OIL
3. STIR TO MIX EVERYTHING
As easy as one two three for real 🙂
EASY BLACKENED CAJUN GRILLED FISH STEP-BY-STEP COOKING GUIDE
- Pat each fish fillet dry with an absorbent paper towel
- Using your hands, smear the rub all over both sides of the fish fillets evenly. Let them marinade for at least 30 minutes
- Place the fish fillet on the pan and cook/grill for about 3-4 minutes on each side (depending on how thick your fish fillet is)
- The seasonings will start to blacken nicely too. The fish will flake easily when it’s fully cooked
- Garnish with lime/lemon slices and some fresh herb like cilantro leaves or parsley leaves
WHAT TO SERVE WITH BLACKENED CAJUN GRILLED FISH
1. Fish taco
I love fish taco and you can easily turn this into fish taco. Add some shredded lettuce, few slices of pickled jalapeno or fresh jalapeno and some kewpie mayo (or other sauce you like) and you are good to go
2. Salad
Serve this blackened cajun grilled fish on top of mixed greens
3. Rice
My family eat this with side of cooked jasmine rice and steamed veggies like broccoli and they are happy campers

Easy Cajun Grilled Fish (Blackened Seasoning)
Ingredients
- 4 skinless firm white fish fillets such as tilapia, mahi-mahi, snapper, cod, bream, or pollock
- 2 Tbsp melted butter for cooking the fish. You can use healthier cooking oil like avocado oil for example
Homemade Cajun Blackened Seasonings:
- 1 Tbsp paprika powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp thyme powder
- 1 tsp cayenne pepper powder add more if you want it spicier
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 2 Tbsp melted butter or use healthier cooking oil like avocado oil for example
Garnishes:
- 1 lime or lemon
- Fresh cilantro leaves or parsley
Instructions
Prepare the Cajun blackened seasonings:
- Mix all the cajun seasoning ingredients in a bowl and set aside
Marinade the fish fillets:
- Pat each fish fillet dry with an absorbent paper towel
- Using your hands, smear the rub all over both sides of the fish fillets evenly. Let them marinade for at least 30 minutes
Cooking the fish:
- Put a nonstick frying pan or grill pan over a high heat and let it get nice and hot. Pour 2 Tbsp of melted butter on the pan. Place the fish fillet on the pan and cook/grill for about 3-4 minutes on each side (depending on how thick your fish fillet is). The seasonings will start to blacken nicely too. The fish will flake easily when it's fully cooked. Remove from the pan to serving platter
- Garnish with lime/lemon slices and some fresh herb like cilantro leaves or parsley leaves

I am not somebody who particularly enjoys cooking – making sweets YES – not cooking. But this recipe is just so, so easy to follow and the results look like something served in a restaurant 😁. I didn’t even realise I’ve been doing it wrong the last two times (have not mixed in oil into seasonings to make a paste!) and they still turn out delicious 😋. This has been my favourite recipe for fish – and it’s so versatile you can eat it with anything and make it seem like a whole new dish 😂. Thank you for sharing this!
ha..ha..! I totally understand the passion for baking more than cooking. Because of this whole stay-at-home situation, I feel like I’m slowly turning into a home baker LOL! baking is addicting and can be therapeutic.
