These Greek yogurt waffles have an incredible crisp texture on the outside while fluffy on the inside and studded with crunchy bits of granola.
Inspiration of this recipe
I always have tubs of Greek yogurt in the fridge. My family knows how much I love Greek yogurt (what a great source of protein!). I eat them for breakfast and snacks. I used them for baking and cooking too. So one day I thought, you know I want to make waffles using Greek yogurt. I don’t want a recipe that uses just a bit of yogurt. I want a substantial amount of it. I know Greek yogurt can be a great substitute for buttermilk in a recipe. So this Greek yogurt waffles recipe is an adaptation of a classic buttermilk waffles recipe.
Granola in the waffles ?
Another obsession of mine is granola and granola bars. I love them. So I thought, why not make some granola waffles? Not waffles with granola sprinkle on top, BUT, I want granola bits studded in the waffles!! So here you go, Greek yogurt granola waffles.
Let’s talk ingredients and substitutions
1. Eggs
I use large eggs that weigh about 58-62 grams with the shell
2. Plain Greek yogurt
I use whole-milk Greek yogurt. I recommend using at least 2% Greek yogurt and not non-fat, but it’s up to you. You can also use plain yogurt (whole milk or low-fat). If you use plain yogurt, which is much thinner in texture compared to Greek yogurt, use 400 grams of it and omit the milk. |
3. Milk
I use 1% milk. You can also use whole milk or any non-dairy milk of your choice
4. Oil
This recipe doesn’t use butter. I use avocado oil. You can use any oil of your choice
5. Sugar
I use granulated sugar. You can also use caster sugar
6. Vanilla extract
It adds a nice flavor to the waffles. I highly recommend not to omit this
7. All-purpose flour
Any flour with medium gluten content will work
8. Baking powder
9. Baking soda
10. Salt
I use fine sea salt
11. Granola
You can use crunchy granola, soft and chewy type of granola. Just make sure you cut or crumble them into tiny pieces. You can see that my waffles are much darker in color because I use a mixture of crunchy granola and chocolate chip granola bars that I made
Greek Yogurt Granola Waffles
Ingredients
- 2 large eggs
- 300 g plain Greek yogurt I used whole-milk Greek yogurt.
- 100 g milk I used 1% milk
- 90 g oil
- 25 g sugar
- 2 tsp vanilla extract
Dry ingredients:
- 210 g all-purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 2 tsp baking powder
- 200 g granola crumble or cut into tiny pieces.
Instructions
- If you use crunchy granola, make sure to cut them into little pieces. If you use soft and chewy type granola, you can cut or crumble them into little pieces too. I prefer crunchy granola, but you use what you like
Prepare the batter:
- Combine all the dry ingredients and set aside. Preheat the waffle iron
- Combine eggs, greek yogurt, milk, oil, and vanilla extract in a large mixing bowl. Use a whisk to mix them until combined. Add the dry ingredients and use a spatula to fold the dry ingredients into the wet. The batter will be thick and lumpy, but that's okay. Only mix until you no longer see pockets of dry flour. Do not overmix the batter.
Baking the waffles:
- Once the waffle iron is nicely preheated, spray with some non-stick spray. Scoop a heaping 1/3 cup of the batter on the waffle iron. Bake for about 5-6 minutes or until the waffles are crisp.
- Place them on a cooling rack to cool and to maintain that crispness if not serving immediately
Storage:
- If not consumed on the same day, let them cool down completely on a cooling rack. Transfer to a freezer bag, push out all the air and seal the bag
To reheat waffles:
- You can preheat in a toaster, using a freezer function if there's one, or simply toast until heated through or reheat in the oven at 350 F (180 C) for 5-6 minutes and then serve immediately. I have also used an air-fryer at 320 F (160 C) for 4-5 minutes (every air fryer can be different, so you may need to play with the timing)

Variations
These Greek yogurt waffles can be easily customized by adding your favorite add-ins like chopped nuts, dried fruit, and chocolate chips, or just leave it plain without any add-ins.

Made this with whole milk plain (non-greek) yogurt option, 150 g granola, 50 g dried cranberries, and 1/2 tsp of salt. Delicious and a hit with the whole family! Thank you for the recipe!
