This easy and delicious scrambled tofu with eggs dish is a staple in many households in Indonesia. It is simple, economical and nutritious at the same time.

Orak Arik Tahu Telur (Scrambled Tofu and Eggs)

What is orak arik?

Orak arik means to scramble in Indonesian. You can basically orak arik pretty much anything and the most common orak arik usually use eggs, tofu, and veggies. All ingredients are usually in small pieces. They are usually meatless but satisfying because you are still getting a good source of protein from the eggs and tofu.

Ingredients

  • 453 gr firm tofu (1 box)
  • 3 large eggs
  • 1 small onion
  • 20 gr wood ear mushrooms
  • 2 small carrots shredded
  • 1 Tbsp cooking oil

Seasonings:

  • 1 Tbsp oyster sauce
  • ½ tsp sugar
  • ½ tsp salt or more to taste
  • 1 tsp chicken powder
  • 1 tsp sesame oil
  • 1 Tbsp sambal oelek optional, for spicy taste
  • ¼ tsp ground white pepper

Garnish:

  • 1 stalk green onion finely chopped

Instructions
 

  • Use a fork to mash the tofu into little pieces. Cut the onion into slices or thicker wedges. Soak the wood ear mushrooms in warm water until they plump up and soft, cut into bite-size pieces. Beaten the eggs with fork to loosen them up
  • Mix all the seasoning in a bowl and set aside
  • Preheat a large skillet or wok. Add cooking oil. Saute the onion for about 2 minutes. Add the shredded carrots and wood ear mushrooms and saute for another minute. Push them to the side and add the eggs. Let them cook undisturbed for about 30 seconds and then start to scramble them into smaller pieces. Add the tofu followed by seasonings. Continue to stir fry to combine everything. Have a taste and adjust seasonings as needed to your preference. Garnish with some chopped green onion
  • Serve this with some rice and while it's warm

How to make orak arik tahu telur

1. Use a fork to mash the tofu into little pieces.

Variations

There are so many other things you can use in your orak arik. You can add different kinds of vegetables such as leeks, green beans, sweet corn kernels, shredded cabbage, bell peppers.
Though orak arik are meatless most of the time, you can include things like sausages, ground meat or even seafood like shrimp if you like.
