I got this wonderful and simple fried chicken recipe from my mom’s friend. You just gotta prepare and plan ahead when you make this recipe because the chicken needs to be marinated overnight.
SOY SAUCE AND GARLIC FRIED CHICKEN (4 servings)
8 chicken drumsticks / thighs or whichever part you like
Vegetable/Peanut oil for frying
MARINADE SAUCE:
2 Tbsp sugar
5 Tbsp soy sauce
1 tsp salt
4 C (1 L) of ice water
10 cloves of garlic (flattened)
COOKING METHOD:
1. Rub the chicken with sauce and marinate overnight (at least 8 hours, the longer the better) in the refrigerator
2. Prepare your steamer to steam the chicken. Before steaming, individually, pat the chicken dry with paper towel. Place them on a plate that will fit into your steamer and steam for 15 minutes. Let it cool down a little bit before deep frying
3. Prepare your fryer with oil. Deep fry each pieces until golden brown
The method of using ice water to marinate and steaming it before frying really makes the chicken extra crispy
