A rice bowl covered with spam luncheon meat, sweet onion, soft creamy scrambled eggs, and drizzles of mayo made a super satisfying meal not to mention so easy, quick, and delicious.

We love SPAM

I grew up with canned luncheon meat and I can tell you it’s one of my favorite foods LOL! I don’t know any Asian kids who do not know luncheon meat! It is an ever-so versatile ingredient if you ask me! Then when I came to the U.S. I learned about SPAM, which is a brand name of canned meat, though SPAM is almost like the vocabulary for luncheon meat. A few years ago we brought our kids to the SPAM museum here in Minnesota! (Yes, our kids love SPAM too!) and they enjoyed that little trip a lot. It is so obvious that SPAM is so well-loved in Hawaii and outside of the U.S., especially in Asia. SPAM was introduced to many Asian countries during or after World War II when it was used as a military ration. This led to its widespread availability in the region and created a familiarity with the product.

What is spam egg mayo rice deopbab?

Deopbap (also spelled “deopbap” or “deopbop”) is a Korean dish that consists of a bowl of rice topped with various seasoned ingredients. The term “deopbap” can be loosely translated to “rice salad” or “rice bowl.” It’s a versatile and customizable dish that can include a wide range of toppings and flavors. So in this case, the rice is topped with SPAM meat, soft scrambled eggs, sweet onion, and drizzles of mayo. If you ask me, this is like a deconstructed SPAM musubi or maybe we should call it SPAM musubi rice bowl?

Ingredients

  • cooked rice the amount depends on how much you eat
  • 200 g SPAM cubed, or luncheon meat of your choice
  • 1 tsp cooking oil

Sweet teriyaki onion:

  • 1 Tbsp cooking oil
  • 1 large onion peeled, thinly sliced
  • 1 ½ Tbsp soy sauce
  • 2 tsp sugar

Scrambled eggs:

  • 4 large eggs lightly beaten
  • 1 tsp sugar
  • 1 tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 Tbsp butter

Garnish:

  • 2 stalk green onion finely chopped

Instructions
 

Cook rice:

  • You can cook some rice following this recipe

Cook sweet teriyaki onion:

  • Preheat a large pan with 1 tablespoon of oil over medium heat. Add the onion slices and sweat for about 3 minutes. Then add soy sauce and sugar and continue cooking until sugar dissolves. Remove from the pan into a plate

Cook luncheon meat:

  • In the same pan, add another teaspoon of oil. Add the meat cubes and cook until they are slightly golden brown. Remove from the pan into a plate

Cook scrambled eggs:

  • Lightly beat the eggs with salt and sugar using a chopstick or a fork. Add 1 tablespoon of butter to the same pan again and heat up over medium heat until it melts. Add the eggs and let them cook undisturbed for about 30 seconds until the eggs look slightly set but still runny in some places. Use a spatula to gently push the eggs from the edge towards the middle and let them cook for another 10-15 seconds. The eggs should start to set softly and still have some runny part. Remove the pan from the heat and give it a few more pushes and leave it in a pan to finish cooking

Assemble and serve immediately:

  • Portion out cooked rice in a large bowl or a deep plate. Arrange 1/2 of the scrambled eggs on the perimeter of the bowl. Put 1/2 of the onion in the middle. Pile 1/2 of the SPAM meat on top. Drizzle with some mayo. Garnish with some chopped green onion
  • Serve while they are still warm

How to cook SPAM egg mayo rice deopbab
