It was one of those days that I just wanted something really easy to make and comforting. What else can it be if it’s not the good ‘ol Mac and Cheese. I spiced it up a little bit by adding some Jalapeno. Macaroni and Cheese has a very special meaning to me.
When I lived in Oklahoma few years ago, I often packed Mac and Cheese for a lunch at work. I often told my friend, Jennifer, how easy and good it was. After I moved back home, I really missed Kraft’s Mac and Cheese. Mac and Cheese is not a common dish in Asia. One day, I got a package and I’m always excited to get something in the mail. I opened it up and I saw few boxes of Kraft’s Mac and Cheese in the package from Jennifer. Awwww…. I almost cried! I was so touched. That makes the mac and cheese tasted even better and more comforting than ever. Thank you so much Jennifer. I can never forget this kind and sweet gesture of her.
Spicy mac and cheese
Ingredients
- 1 box of KRAFT's Mac and Cheese
- ½ lb of ground beef
- ½ onion finely chopped
- 2-3 jalapenos seeded and finely chopped
- 2 Tbsp canola oil
- Salt and Pepper to taste
Instructions
- Preheat a pan and add canola oil. Saute onion and jalapenos until soft. Add in the ground beef and continue to saute until they are cooked through. Season with salt and pepper, maybe a bit easy on the salt as the cheese is already kinda salty. Turn off the heat and set aside
- In a separate pan, prepare the mac and cheese according to the instruction in the box. Add in No.1 and mix everything well. Turn off the heat and ready to serve
