I have to admit that it does get a little hot to cook at the kitchen lately. I consider Minnesota’s summer as a “mild” one compare to that in Oklahoma, but still, the temperature inside the house rises quickly as soon as I do some cooking. But, I still need to prepare meal on the weekdays and some days I just want to fix something really quick to go with our main staple, rice. So, I thought of this stir-fried shredded pork with sweet bean paste. It’s really quick to whip and taste yummy on top of rice too. The meat goes really well with the green onion on the side as well. There you go, a quick protein dish without heating up the kitchen too much 🙂
STIR-FRIED SHREDDED PORK WITH SWEET BEAN PASTE
Ingredients
- 1 lb pork or beef tenderloin (cut into long thin strips)
- 3 Tbsp of grape seeds oil or oil of your choice
Marinade:
- 1 Tbsp shao xing wine
- 1 Tbsp soy sauce
- 1 Tbsp corn starch
- 1 ½ Tbsp water
- 1 Tbsp of oil
Seasonings:
- 1 ½ Tbsp sweet bean paste
- ½ Tbsp shao xing wine
- 1 Tbsp soy sauce
- 1 Tbsp sugar
Garnish:
- 3 stalks of green onion (cut into long thin strips and soak in cold water while you are preparing for other things)
Instructions
- Marinade the meat with the marinade ingredients (except for the oil, add that last just before cooking) and let sit for about 30 minutes. Mix all the seasonings ingredient in the bowl and set aside
- Preheat a wok and then add in oil. Add in the meat and stir-fry the meat until it changes color. Add in the seasonings you prepared above and stir-fry until the pork is cooked through. Remove from the wok into a serving platter. Serve with shredded green onions on the side
