Red Bean/Azuki Bean can be used to cook both savory and sweet dishes. For this recipe, I used Red Bean / Azuki Bean as a sweet treat. I used Azuki Bean in several other different recipes as well. A simple delicious dessert that is easy to make and always remind me of childhood 🙂
SWEET RED BEAN SOUP
Ingredients
- 12 oz 350 g red beans
- 7 oz 200 g palm sugar
- 2 pandan leaves knotted
- 2.0 litres of water
- 6.5 fl oz 200 ml of coconut milk
Instructions
- Wash red beans thoroughly with water
- Bring 2.0 liters of water to boil. Add red beans and cook for about 30 minutes, turn off heat. Let them soaked with lids on for about 30- 45 minutes for faster cooking
- Bring it back to boil, add pandan leaves, palm sugar and lower heat. Let it simmer until the beans are soft
- Add coconut milk and let it simmer for few minutes. Turn off the heat
- Ready to be served hot and you can add some coconut milk if you want
