DENDENG DAGING BABI / PORK JERKY

Dendeng means Jerky in Indonesian Language. The meat is pan-fried with its marinating juices until it’s dried up and then some oil is added to refried it. I got this wonderful dendeng recipe from my mom’s friend. It goes well with rice or just eating it for fun.

DENDENG DAGING BABI / PORK JERKY (4 servings)
 

What you will need:
  • 2 lbs of pork – feel free to substitute with chicken or even beef
  • Spices to ground:
  • 5 oz shallots
  • 3.5 oz garlic
  • 8 cloves of candlenuts/kemiri
  • 2 tbsp of coriander seeds/ketumbar
  • 3 tbsp of gula jawa / gula melaka / palm sugar
  • 1 tbsp white pepper
  • 1 tbsp fish sauce
  • 1 tsp salt
  • Seasoning:
  • 2 tbsp dark soy sauce
  • 2 tbsp light soy sauce
  • ½ cup coconut milk
  • 4 Tbsp of oil for cooking

Instructions:
  1. Cut pork into thin slices and marinate with the grounded spices and Seasoning overnight
  2. Heat the pan briefly without any oil and pour in the marinated pork along with the juices. Saute on low heat until the juices and the pork cooked and dried up
  3. Add 4 Tbsp of oil and stir fry briefly
  4. Ready to serve
